In the United States, researchers have discovered one of the mechanisms behind the inflammatory response. Specifically, they have isolated a molecule capable of preventing the intestinal reaction: alpha-melanocyte-stimulating hormone (a-MSH).

This molecule appears to block inflammation at the cellular level. At least the results obtained in vitro, in the laboratory. These scientists hope to eventually produce a drug that can act locally by inhibiting the reaction before it causes any harm. But several years of research will be needed before considering this possibility.
An enzyme “Poison”

Another hope of treatment, perhaps more concrete, has a team of American and Norwegian researchers. They have studied the protein causing the disease, called gliadin. This is a piece of gluten causes inflammation in the intestine. Now scientists have identified the part of gliadin directly responsible for the problem. And most importantly, they believe they have found an enzyme capable of destroying the fraction “toxic”.

This promising substance is produced by bacteria. To treat patients, it would give them daily this enzyme. They would then be protected by the drug and poison would need to monitor their diet. ” If the tests seem to work on animals, tests on humans have not yet begun.

Until these studies are successful, the gluten intolerance have no choice: they must avoid all foods that contain traces of wheat, barley, rye … hard, when we know that less than 10%products commercially available are truly gluten-free …

Patients spend their lives to monitor their diet to avoid the risk of swallowing the cereal “cursed”: wheat, rye, barley … But new work gave hope to develop a treatment. The intolerant will they be able to eat without missing out?

The number of gluten intolerance is largely underestimated in France. For these patients, new treatment hopes arise.

Serious consequences on health

The mechanisms of intolerance to gluten have been announced. When victims of this disease swallow some cereals such as wheat or barley, an inflammatory reaction is triggered at the small intestine accompanied by a general decline in immunity. It follows from digestive disorders such as diarrhea, poor absorption of food … But this can cause more serious problems such as stunted growth in children, neurological symptoms … Recently, gluten intolerance has also been revealed in cases of migraine. Find a treatment against this disease is therefore essential.

If the principle of the diet is simple, it is not very clear to put into practice especially after 1 Year. Cereals, as we know, Europe is the staple food and excluding bread, pasta, meal, pastries and sweets is not easy especially in school canteens and communities.

In addition to common foods, products are guaranteed gluten free (gluten-free flours Apoglut, Rice-diet, Riésal etc.) but their cost may be difficult to bear in modest backgrounds. Asian products are often based on rice are relatively cheap and can be recommended. On the other hand, the flour can be replaced in the preparation of meals by the cornstarch or potato starch potato, as the examples below.

It is often necessary to start the diet, also exclude lactose from the diet. Indeed, lesions of the intestinal mucosa (villous atrophy) are responsible for a decrease in activity of the lactase enzyme needed to digest lactose, which is located in the area of the mucosa. The duration of this diet is theoretically for life.

Today, the only treatment against celiac disease is gluten-free diet. But difficult to avoid all traces of wheat, barley and rye. Because these grains are hidden in almost all food, beer and deli through the pastry. Some explanations and tips for safe eating.

This diet excludes wheat, barley, oats and rye is not very easy to implement because it often involves changing eating habits entrenched. It is simply cooking with natural foods (not commercially prepared) and highlight what is allowed instead of thinking in terms of forbidden foods. Wheat flour between not only the composition of all the breads and pastries, but also in the many dishes prepared (as a binder for sauces).

There is currently no legal obligation to mention the contribution of gluten on food and the very composition of foods varies with time, up to a certain point does not contain gluten, and later, be hold. The list of foods allowed varies with time and regular updating is essential. It is available in the specialized hospital services and the French Association of gluten intolerance.

Prohibited Foods

Generally, breads, pastries, pasta, semolina is prohibited. Dairy products do not pose a problem, except the cheese and spread some cream jelly; caution is required with the yogurt flavored with chocolate. The meats are avoided except ham. The fruit can be eaten without problem (except figs often in flour). The meat and fresh fish are allowed, but the dishes (fresh, canned or frozen) are excluded because they contain flour as a binder. All fresh vegetables, canned or frozen are possible, but canned called “stewed” may contain flour. Many candies contain gluten and sugar only “pure sugar” or “pure fruit” and the candy does contain acid and can never be consumed.
